  • 1/4 cup brown sugar (lightly packed)
  • 4 cloves garlic (minced)
  • 2 large jalapenos (sliced)

Instructions

  1. Season chicken thighs with salt and pepper, then coat with cornstarch and set aside.
  2. In a bowl, whisk together soy sauce, water, brown sugar, and minced garlic.
  3. Slice jalapenos and remove seeds for less heat if desired.
  4. Heat vegetable oil in a heavy-bottomed pot to 315°F (157°C).
  5. Fry chicken pieces in batches for 5-6 minutes until golden brown; flip halfway through.
  6. Increase oil temperature to 350°F (177°C) and fry again for extra crispiness for 3-4 minutes.
  7. In a skillet, bring the prepared sauce mixture to a boil, add fried chicken and jalapenos, tossing to coat.
  8. Simmer until the sauce thickens before serving.
