  • 300 g boneless chicken breast or thighs
  • 1 red bell pepper
  • 1 green bell pepper
  • 200 g potatoes
  • 150 g long grain or jasmine rice
  • Chili paste
  • Soy sauce
  • Garlic
  • Olive oil

Instructions

  1. Cook the rice: Rinse rice under cold water. Combine rinsed rice with salted water in a pot. Bring to a boil, reduce heat, cover, and simmer for 12–15 minutes until tender.
  2. Roast the potatoes: Preheat oven to 200°C (390°F). Toss potato chunks with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for about 25 minutes until crispy.
  3. Stir-fry chicken: Heat vegetable oil in a large wok over medium-high heat. Add seasoned chicken strips; sauté for 4–5 minutes until browned.
  4. Add vegetables: Stir in minced garlic, onions, and bell peppers; cook for another 3–4 minutes until veggies are slightly softened.
  5. Sauce it up: Mix in chili paste and soy sauce; cook for an additional 2 minutes.
  6. Serve hot: Plate the stir-fry with steamed rice and roasted potatoes.
