  • 200g baby potatoes
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 garlic cloves
  • 250ml chicken broth
  • Olive oil
  • Spices (smoked paprika, cumin, turmeric)
  • Lemon juice
  • Parsley

Instructions

  1. Parboil baby potatoes in salted water for about 10 minutes until just tender. Drain and set aside.
  2. Rinse the rice and cook according to package instructions in salted water; fluff with a fork and mix in chopped parsley.
  3. In a large pan, heat olive oil over medium-high heat. Season chicken with salt, pepper, and spices; sear for 5-6 minutes until browned.
  4. Add garlic, onion, and bell peppers; sauté for 3-4 minutes until softened.
  5. Stir in tomato paste and lemon juice, then add parboiled potatoes and chicken broth. Mix well and simmer covered for 15-20 minutes until everything is tender.
  6. Adjust seasoning, serve hot with herbed rice garnished with parsley.
