  • kosher salt & black pepper (to taste)
  • ¾ cup black beans
  • ½ cup finely diced red bell pepper
  • ½ cup corn (preferably fire-roasted)
  • ¼ cup finely diced red onion
  • ¼ cup chopped cilantro

Instructions

  1. Cook chicken in boiling salted water until it reaches an internal temperature of 165°F (15-20 minutes).
  2. Shred the cooked chicken using forks or a stand mixer.
  3. In a separate bowl, whisk together Greek yogurt, lime juice, cumin, chili powder, smoked paprika, salt, and pepper.
  4. Combine shredded chicken with dressing and mix in black beans, bell pepper, corn, onion, and cilantro until well combined.
