  • 16 oz penne pasta
  • 1 lb boneless skinless chicken breasts
  • 2 tbsp taco seasoning
  • 2 tbsp extra-virgin olive oil
  • 1 small onion
  • 3 cloves garlic
  • 15 oz black beans
  • 15 oz corn
  • 10 oz Rotel diced tomatoes with green chilies
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Chopped fresh cilantro (optional)

Instructions

  1. Cook penne pasta according to package instructions; drain and set aside.
  2. Cut chicken into bite-sized pieces and coat with taco seasoning.
  3. Heat olive oil in a large skillet over medium-high heat; cook chicken until fully cooked (165°F).
  4. Remove chicken and sauté onions until softened; add garlic for an additional minute.
  5. Stir in black beans, corn, Rotel, heavy cream, and cheddar cheese; simmer for about 5 minutes.
  6. Add cooked chicken and pasta back to the skillet; mix thoroughly and heat through for another 2–3 minutes. Garnish with cilantro before serving.
