  • 1⅓ cups warm water (300 grams)
  • 1/4 cup granulated sugar (56 grams) or honey
  • 4 cups bread flour (500 grams)
  • 1½ tablespoons extra-virgin olive oil (20 grams)
  • 2 teaspoons fine salt (9 grams)

Instructions

  1. In a large bowl, combine the sourdough starter, warm water, and sugar until dissolved.
  2. Stir in flour, olive oil, and salt until a shaggy dough forms.
  3. Cover the dough with a damp towel and let it rest for 30 to 45 minutes.
  4. Stretch and fold the dough several times before letting it rise at room temperature for 4–12 hours.
  5. Shape the dough into a log and place it seam-side down in a greased loaf pan. Let it rise for 1–2 hours until doubled.
  6. Preheat your oven to 375ºF and bake for about 40 minutes until golden brown.
  7. Cool on a rack for at least one hour before slicing.
