  • 2 egg yolks
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract

  • 1/2 cup sourdough discard

Instructions

  1. Preheat the oven to 350°F and prepare a greased and parchment-lined loaf pan.
  2. Reduce apple cider in a saucepan until it measures about ½ cup; let cool.
  3. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in one bowl.
  4. In another bowl, mix brown sugar, egg yolks, sour cream, vanilla extract, oil, sourdough discard, and cooled apple cider until smooth.
  5. Combine wet and dry ingredients gently until just mixed; avoid overmixing.
  6. Pour batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for about 20 minutes before transferring to a wire rack.
