  • 1 pack instant yeast (2 teaspoons)
  • 1 cup water
  • 2 cups flax milk (or other plant milk)
  • 4 tablespoons coconut butter
  • 1 cup date sugar
  • 1 cup chocolate chips, melted with 1/4 cup coconut butter
  • 2 tablespoons coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cups peanuts, chopped
  • Pinch salt
  • 2.5 cups organic powdered sugar
  • 1 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast in warm water for about 10 minutes until foamy.
  2. In a bowl, mix dry ingredients; add proofed yeast and wet ingredients, stirring until a dough forms.
  3. Cover and let rise for 45 minutes to an hour.
  4. Preheat oven to 350°F.
  5. Roll out the dough into a rectangle.
  6. Prepare filling by melting chocolate with coconut butter; mix in remaining ingredients.
  7. Spread filling on dough, sprinkle chopped peanuts, roll tightly, and cut into pieces.
  8. Place rolls in a greased baking dish and bake for 20–25 minutes.
  9. Prepare icing by mixing peanut butter with flax milk, maple syrup, vanilla extract, and powdered sugar until smooth.
