  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • Salt and cracked black pepper to taste
  • 1/2 tablespoon brown sugar
  • 1/2 cup crushed tomatoes
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup water or beef stock
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced

Instructions

  1. Chop onions, garlic, ginger, and bell peppers.
  2. In a Dutch oven, heat olive oil over medium heat; sauté onions until soft.
  3. Add ginger and garlic; cook until fragrant.
  4. Brown the beef chunks seasoned with salt and spices.
  5. Stir in crushed tomatoes, coconut milk, brown sugar, and water or stock; bring to a gentle simmer.
  6. After 45 minutes, add sliced bell peppers; cook for an additional 15–20 minutes until tender.
