  • 2 pounds boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans cannellini beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 3/4 block cream cheese (6 ounces)
  • 1 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 2 cans fire roasted mild diced green chiles (2x4 oz)
  • 1 bay leaf
  • 1 1/2 cups frozen corn, thawed

Instructions

  1. Place chicken breasts in the bottom of a 7 qt slow cooker.
  2. Season with cumin, salt, black pepper, chili powder, cayenne pepper, dried oregano.
  3. Add chicken broth, diced onions, minced garlic, and bay leaf.
  4. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  5. About two hours before serving, add rinsed beans and thawed corn.
  6. For creaminess, blend about 2 cups of chili and return to the pot.
  7. Shred the cooked chicken and mix back into the chili before serving.
