  • 2 ½3 lb. boneless pork shoulder
  • 1 small yellow onion
  • 3 garlic cloves
  • 1 ½ cups BBQ sauce
  • ¼ cup apple cider vinegar
  • 1012 oz. coleslaw mix
  • Green onions and cilantro for garnish
  • Cooked rice for serving

Instructions

  1. Place sliced onion at the bottom of the slow cooker.
  2. Add the pork shoulder on top of the onions.
  3. Sprinkle with minced garlic, pour BBQ sauce, and drizzle apple cider vinegar around the edges.
  4. Cover and cook on LOW for 8-10 hours until tender.
  5. Shred the pork in the cooker, mixing it with juices; season to taste.
  6. Prepare slaw by mixing coleslaw mix with green onions, cilantro, lime juice, oil, honey, cumin, and seasonings; refrigerate.
  7. To serve, layer rice, slaw, and shredded pork in bowls; drizzle with BBQ sauce.
