  • 2kg (4-4.5 lb) Lamb Shoulder or Leg
  • 600g (21 oz) Potatoes
  • 1 Onion
  • 3 Cloves Garlic
  • 2 Sprigs Rosemary
  • 1 tbsp Olive Oil
  • 2 tsp Dried Oregano
  • 1 tbsp Lemon Juice & Zest
  • Salt & Black Pepper
  • 150ml (⅔ cup) Stock
  • 1 Bay Leaf

Instructions

  1. Prepare the base: Peel and quarter the onion, then layer it at the bottom of the slow cooker. Slice potatoes and add them to the cooker.
  2. Stuff the lamb: Make incisions in the lamb and fill them with sliced garlic and rosemary.
  3. Marinate: Mix olive oil, crushed garlic, oregano, lemon juice/zest, salt, and pepper in a bowl; rub it onto the lamb.
  4. Sear: Heat a non-stick pan over medium heat; sear the lamb until golden brown on all sides.
  5. Combine: Place seared lamb on top of potatoes and onions in the slow cooker. Pour stock over it and add bay leaf.
  6. Cook: Cover and cook on low for about 8 hours until both lamb and potatoes are tender.
  7. Serve: Ladle out any gravy from the slow cooker; simmer it to thicken before serving.
