  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium potatoes, peeled and cubed
  • 2 large carrots, sliced into rounds
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Cooked jasmine rice for serving

Instructions

  1. Place chicken, onion, garlic, ginger, potatoes, and carrots into the slow cooker.
  2. In a mixing bowl, whisk together coconut milk and seasonings until smooth.
  3. Pour the coconut milk mixture over the ingredients in the slow cooker and stir gently.
  4. Cover and cook on Low for 6 to 7 hours or High for 3 to 4 hours until chicken is tender.
  5. Stir in lime juice before serving hot over jasmine rice and garnish with cilantro.
