  • 35 pound chuck roast
  • 6 large carrots
  • 2 onions
  • 4 cloves garlic
  • 4 cups low-sodium beef broth
  • Fresh thyme and rosemary
  • Olive oil
  • Butter
  • Flour
  • Kosher salt
  • Pepper

Instructions

  1. Season both sides of the chuck roast generously with kosher salt and pepper.
  2. In a heavy-bottomed pot or cast iron skillet, heat olive oil over medium-high heat and sear each side of the roast for about 2 minutes until browned.
  3. Remove the roast and place it in the slow cooker.
  4. In the same skillet, sauté onion chunks and carrot halves until slightly caramelized, then add minced garlic before transferring everything into the slow cooker.
  5. Pour in beef broth and top with thyme and rosemary sprigs.
  6. Cover and cook on low for 8 hours or high for 5-6 hours until tender.
  7. For gravy, strain out two cups of liquid from the slow cooker, whisk in melted butter and flour in a skillet, then gradually add reserved liquid until thickened.
