  • 1 pound boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 onion, diced
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano
  • 1/4 teaspoon allspice
  • 1 teaspoon lemon pepper
  • 1 cup fat-free plain Greek yogurt
  • 1/2 cup grated cucumber
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Spray the slow cooker with nonstick spray and place chicken inside.
  2. In a mixing bowl, combine garlic, lemon juice, onion, water, olive oil, red wine vinegar, oregano, and mix well; pour over chicken.
  3. Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours until tender.
  4. Prepare tzatziki by mixing yogurt, garlic, cucumber, parsley; season with salt and refrigerate for at least an hour.
  5. Shred cooked chicken in the slow cooker and serve on warm pita bread topped with tzatziki and your favorite veggies.
