  • ¼ tsp freshly ground black pepper
  • 2 Tbsp neutral oil (grapeseed, canola, or avocado)
  • 23 cups cooked white rice
  • 1 cup cilantro chimichurri

Instructions

  1. Pat the skirt steak dry and season generously with salt and pepper. Let it rest at room temperature for at least 15 minutes.
  2. If you haven't prepared it yet, make your cilantro chimichurri sauce.
  3. Heat a cast-iron skillet over high heat for about 5 minutes. Add neutral oil and carefully place the seasoned steak in the skillet. Cook for 2-3 minutes on each side until it reaches an internal temperature of 125-130°F.
  4. Allow the steak to rest for 5-10 minutes before slicing thinly against the grain.
  5. Assemble bowls by dividing cooked rice among them, topping with sliced steak and chimichurri sauce.
