  • 2 large eggplants
  • 1 cup reduced fat ricotta cheese
  • 1 1/2 cups shredded light mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 9 oz frozen spinach (thawed)
  • 1 egg
  • 1 clove garlic (minced)
  • 1 cup tomato passata or marinara sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice eggplants lengthwise and roast on a greased baking sheet for 10 minutes; cool.
  3. In a bowl, mix ricotta, half mozzarella, Parmesan, spinach, egg, garlic, salt, and pepper.
  4. Spread tomato sauce in a baking dish; fill each eggplant slice with ricotta mixture and roll up.
  5. Place seam-side down in the dish; top with remaining sauce and mozzarella.
  6. Cover with foil and bake at 350°F (175°C) for 45 minutes; uncover and bake an additional 15 minutes until golden.
