  • 2 pounds lean ground lamb (or beef)
  • 1 large yellow onion
  • 2 large carrots
  • 2 celery ribs
  • 3 cloves garlic
  • ½ cup dry red wine
  • 2 cups beef stock
  • 2 ½ pounds Russet potatoes
  • 1 ¼ cups shredded aged cheddar cheese

Instructions

  1. Heat oil in a large ovenproof sauté pan over medium-high heat. Brown the ground meat for about 5-8 minutes, then remove excess fat.
  2. Sauté chopped onion, carrots, and celery until softened. Add minced garlic and herbs; cook for an additional minute.
  3. Deglaze with red wine, scraping up browned bits until nearly evaporated.
  4. Stir in tomato paste and flour; cook briefly before adding beef stock and Worcestershire sauce.
  5. Return meat to the pan, cover, and simmer for about 45 minutes.
  6. Mix in peas and corn; continue cooking for another 15 minutes.
  7. Prepare mashed potatoes by boiling quartered Russet potatoes until fork-tender, then ricing them into a pot.
  8. Mix in butter, warmed cream, cheese, and egg yolk until creamy.
  9. Spread mashed potatoes over the meat mixture, drizzle with melted butter, and top with remaining cheese.
  10. Bake at 375ºF for about 30 minutes or until golden brown.
