  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 pound ground beef or ground lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt & black pepper, to taste
  • ¾ cup frozen peas
  • ½ cup milk
  • 2 tablespoons butter
  • ¼ teaspoon garlic powder
  • Salt & black pepper, to taste
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and dry russet potatoes; prick with a fork and rub with olive oil and salt. Bake for 45–50 minutes until tender.
  3. In a large skillet, heat olive oil over medium heat; brown ground meat. Drain excess grease.
  4. Add diced onion, carrots, and garlic; cook until softened.
  5. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, pepper, and beef broth; simmer for 10 minutes.
  6. Slice the tops off baked potatoes and scoop out insides into a bowl; mix with milk, butter, garlic powder, salt, and pepper.
  7. Fill each potato skin with meat mixture; top with mashed potatoes and optional cheese.
  8. Bake again for 10–15 minutes until golden.
