  • 4 medium carrots, chopped
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast generously with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the roast on all sides until browned (about 4-5 minutes per side). Remove from pot.
  3. Add onions, carrots, and garlic to the pot; sauté until softened (3-4 minutes).
  4. Return the roast to the pot and pour in beef broth until it reaches halfway up the meat. Bring to a gentle simmer.
  5. Cover the pot and transfer it to the preheated oven. Cook for about 3 hours or until fork-tender.
  6. Let rest for 10 minutes before slicing and serve with vegetables.
