  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box of corn muffin mix (8.5 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the grated zucchini, chopped onion, and half of the shredded cheddar cheese.
  3. Add the corn kernels, chopped jalapeño, eggs, garlic powder, cumin, salt, black pepper, and corn muffin mix; stir until well combined.
  4. Pour the mixture into a greased 9×13 inch baking dish and spread evenly.
  5. Bake for about 50 minutes until golden brown on top.
  6. In the last five minutes of baking, sprinkle the remaining cheddar cheese on top until melted.
  7. Let cool slightly before serving.
