  • 21/4 cups mirepoix (diced carrots, celery, onion)
  • 1 teaspoon minced garlic
  • 4 cups chopped baby gold potatoes
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups freshly shredded extra-sharp Cheddar cheese
  • 1/4 cup sour cream
  • Hearty buttered bread (for serving, optional)

Instructions

  1. In a large pot over medium-high heat, cook the Italian sausage until browned; transfer to a plate.
  2. In the same pot, melt 1 tablespoon of butter and sauté the mirepoix for about 5–7 minutes. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in chopped baby gold potatoes, spices, and chicken stock; bring to boil, then reduce heat and simmer until potatoes are tender (15–20 minutes).
  4. In a separate medium pot, melt remaining butter and whisk in flour; gradually add milk until thickened. Stir in heavy cream.
  5. Combine the creamy mixture with the cooked vegetables, then add shredded cheese and sour cream until melted.
  6. Return cooked sausage to the soup, taste, adjust seasoning if needed, and serve warm.
