  • ½ pound sweet Italian sausage (crumbled)
  • 4 cloves garlic (minced)
  • 1 generous pinch crushed red pepper flakes
  • 1 small zucchini (chopped)
  • 1 small eggplant (peeled and chopped)
  • 8 ounces bowtie pasta
  • 2 ½ cups water
  • 4 cups baby spinach
  • ¼ cup grated parmesan cheese
  • 23 Tablespoons olive oil (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large shallow pan over medium-high heat. Add crumbled sausage and brown for about 5 minutes.
  2. Stir in minced garlic and crushed red pepper flakes; cook for 1–2 minutes until fragrant.
  3. Add chopped zucchini and eggplant; sauté for another 2–3 minutes until lightly browned.
  4. Pour in bowtie pasta and water; bring to a boil, then reduce heat to medium and simmer for 11–12 minutes until pasta is al dente.
  5. Mix in baby spinach and grated parmesan until spinach wilts; season with salt and pepper to taste.
