  • 2 lbs beef chuck, cut into cubes
  • 1 cup red wine
  • 2 cups beef broth
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, cut into chunks
  • 8 oz mushrooms, sliced
  • 1 cup pearl onions, peeled
  • 2 tablespoons vegetable oil
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 1.5 lbs small new potatoes or baby potatoes
  • 3 tablespoons butter
  • Salt and black pepper
  • 1 sprig fresh thyme
  • 1 bay leaf

Instructions

  1. Season beef with salt and pepper. In a heavy pot or Dutch oven, heat vegetable oil over medium-high heat and brown the beef in batches for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, mushrooms, and pearl onions for 5-6 minutes until softened.
  3. Stir in tomato paste and flour; cook for another 2-3 minutes.
  4. Add red wine to deglaze the pot; bring to a simmer before returning the beef along with broth, thyme sprig, and bay leaf.
  5. Cover and simmer on low heat for 1.5 to 2 hours until beef is tender.
  6. Boil washed new potatoes in salted water until fork-tender (15-20 minutes). Drain and return to pot; add butter and smash gently.
  7. Serve stew hot alongside garlic butter smashed potatoes.
