  • 2 tbsp (26g) unsalted butter, cut into pieces
  • 2 1/4 tsp active dry or instant yeast (1 standard packet)
  • 1 1/2 tbsp granulated sugar
  • 1/4 cup (60g) lukewarm milk
  • 2 cups (250g) all-purpose flour
  • 1 egg
  • 1/2 cup (100g) pumpkin puree
  • 3/4 tsp salt
  • 1 1/2 tsp dried rosemary
  • 3/4 tsp ground cardamom
  • 1 egg
  • 1 tbsp milk or water

Instructions

  1. Prepare brown butter by melting it in a light-colored pan over medium heat until golden and nutty. Set aside to cool.
  2. In a stand mixer bowl, combine active dry yeast, sugar, and lukewarm milk; let sit for 5-10 minutes until foamy.
  3. Add cooled brown butter, flour, egg, pumpkin puree, salt, dried rosemary, and cardamom to the yeast mixture. Knead on medium-low speed for 20-25 minutes until smooth.
  4. Cover and proof the dough for 45 minutes to an hour until doubled in size.
  5. Shape into 8 equal balls and place in a greased baking tin. Let proof again for another 45 minutes to an hour.
  6. Preheat oven to 375°F (190°C). Brush rolls with an egg wash and bake for 20-25 minutes until golden brown.
