  • 45 Bone-In Chicken Thighs
  • 1 Red Onion, sliced
  • 12 Honeycrisp Apples, sliced
  • 4 tbsp Salted Butter
  • 3/4 cup Apple Cider
  • 2 tbsp Dijon Mustard
  • Olive oil, Salt, Pepper
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsps Fresh Rosemary, chopped
  • 1/2 cup Chicken Broth or White Wine
  • 3 cloves Garlic

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season the chicken thighs with onion powder, garlic powder, smoked paprika, thyme, and rosemary.
  3. Heat olive oil in a cast iron skillet over medium-high heat; sear the chicken thighs skin-side down for about 6-8 minutes per side until golden brown.
  4. Add sliced onions and apples around the chicken in the skillet.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove chicken and vegetables; prepare the sauce by melting butter in the skillet and stirring in apple cider, broth (or white wine), Dijon mustard, and garlic.
  7. Whisk until slightly thickened before returning chicken and apples to the skillet.
  8. Serve warm with sauce spooned over.
