  • 2 large rosemary sprigs

  1. Freeze two saucers for testing doneness later. Peel, core, and chop pears into small pieces.
  2. In a mixing bowl, combine pear chunks with sugar and lemon juice. Cover and refrigerate for 12 hours to macerate.
  3. Finely chop rosemary leaves, then transfer the pear mixture (including juices) into a heavy-bottomed pan. Add chopped rosemary.
  4. Heat uncovered over medium heat until sugar dissolves completely. Increase heat to high and boil for approximately 15 minutes while stirring occasionally.
  5. Use a digital thermometer to ensure the mixture reaches 221°F (setting point). Remove one saucer from the freezer, test the jam for doneness by placing a small amount on it; if it wrinkles when pushed, it's ready.
  6. Pour hot jam into warm sterilized airtight jars, seal tightly, label accordingly, and store.
