  • 1kg fresh tomatoes
  • 34 garlic cloves
  • 1 medium white onion
  • 1 large handful fresh basil leaves
  • 240ml chicken or vegetable stock
  • 1 tbsp butter
  • Salt and black pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 200C/390F.
  2. Halve the tomatoes and place them on a baking tray with garlic cloves and thyme. Drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes until lightly charred.
  3. In a large pot, melt butter over medium heat, add diced onions, and sauté until caramelized.
  4. Remove roasted garlic from its skin and add all roasted ingredients to the pot along with stock and basil. Simmer covered for at least 30 minutes.
  5. Blend the soup until smooth using a hand blender. Adjust seasoning if needed.
  6. Serve hot, optionally alongside grilled cheese sandwiches.
