  • 8 oz mozzarella cheese (cubed)
  • 4 oz mini pepperoni
  • 4 oz sliced black olives
  • ½ pint cherry tomatoes (halved)
  • 2 jarred roasted red peppers (diced)
  • 3 tbsp roasted red pepper oil
  • 1 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp red wine vinegar
  • 3 tbsp grated parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the tortellini according to package instructions; drain and cool.
  2. In a large bowl, mix mini pepperoni, black olives, mozzarella cubes, cherry tomatoes, diced roasted red peppers, and cooled tortellini.
  3. In another bowl, whisk together the roasted red pepper oil, olive oil, balsamic vinegar, red wine vinegar, and parmesan cheese.
  4. Pour the dressing over the salad mixture and gently stir to combine; season with salt and pepper.
