  • 1 tablespoon coconut or olive oil
  • 3 cloves garlic (minced)
  • 1 pound frozen corn or 2 cups fresh cooked corn
  • 1 pint cherry tomatoes
  • 1/2 pound orzo pasta
  • 1/4 cup olive oil
  • 1/4 cup fresh basil (chopped)
  • 2 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook orzo pasta according to package directions. Drain and set aside to cool.
  2. In a large skillet, heat coconut or olive oil over medium-high heat. Sauté minced garlic for about 3 minutes, then add corn and cook for an additional 3 minutes. Remove from heat and let cool.
  3. In a large mixing bowl, combine cooked orzo, cherry tomatoes, and chopped basil. Add in the cooled corn-garlic mixture.
  4. In a medium bowl, whisk together olive oil, red apple vinegar, lemon juice, salt, and pepper. Pour dressing over the salad and toss to coat evenly.
  5. Serve at room temperature or chill before serving.
