  • 1 whole chicken (45 lbs)
  • 2 tablespoons salt
  • 1 tablespoon Bayou City All Purpose Seasoning
  • 1 lb baby potatoes
  • 1 lb carrots
  • 4 tablespoons olive oil
  • sticks softened butter
  • 4 cloves minced garlic
  • Lemon zest
  • Fresh herbs (rosemary, thyme, sage)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Season the chicken with 1 tablespoon of salt and set aside.
  3. In a bowl, mix softened butter with garlic, seasonings, and lemon zest.
  4. Pat the chicken dry, rub the garlic butter all over it, and stuff the cavity with lemon slices and herbs.
  5. Toss vegetables in olive oil, salt, and seasoning; place them in a roasting pan.
  6. Position the chicken on top of the vegetables and roast for about 90 minutes or until internal temperature reaches 165°F (75°C), basting every 30 minutes.
  7. Let rest for 10-15 minutes before carving.
