  • 4 chicken drumsticks
  • 2 medium potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 garlic cloves, minced
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a baking dish, toss potatoes and carrots with 1 tablespoon of olive oil, salt, black pepper, thyme, oregano, and minced garlic.
  3. Rub the chicken drumsticks with the remaining olive oil and seasonings.
  4. Place the seasoned chicken on top of the vegetables in the baking dish.
  5. Roast in the oven for 40-45 minutes or until the chicken reaches an internal temperature of 75°C (165°F) and the vegetables are tender. Turn the chicken halfway through cooking for even browning.
  6. Garnish with fresh parsley before serving.
