  • 2 cups Brussels sprouts, halved
  • 2 cups sweet potatoes, cubed
  • 3 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp smoked paprika
  • 1/2 cup dried cranberries
  • 1/2 cup pomegranate seeds
  • 1/3 cup goat cheese, crumbled
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss butternut squash, Brussels sprouts, and sweet potatoes with olive oil, smoked paprika, salt, and black pepper until well coated.
