  • 1.5 pounds boneless chicken thighs, cut into chunks
  • 3 large carrots, peeled and sliced
  • 2 celery stalks, finely chopped
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1.5 pounds baby potatoes, halved
  • 4 cups chicken broth
  • ½ cup heavy cream
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. In a Dutch oven over medium-high heat, season the chicken with salt and pepper. Add olive oil and brown the chicken on all sides; remove and set aside.
  2. In the same pot, sauté onion, celery, and carrots until softened. Stir in garlic and cook for another minute.
  3. Sprinkle in flour to coat the vegetables evenly. Gradually pour in chicken broth while scraping up browned bits from the pot.
  4. Return the browned chicken along with baby potatoes, thyme, and bay leaves to the pot.
  5. Bring to a boil; then reduce heat and simmer uncovered for about 35–40 minutes until chicken is tender.
  6. Stir in heavy cream and lemon juice; simmer for an additional 5 minutes before adjusting seasoning as needed.
  7. Serve hot garnished with fresh parsley.
