  • 1 1/4 cups brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1 1/2 cups mini chocolate chips
  • 18 large Reese's peanut butter cups

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, beat the melted butter, brown sugar, granulated sugar, and peanut butter until smooth.
  4. Mix in the vanilla extract and eggs until well combined.
  5. Gradually add the dry ingredients to the wet mixture and fold in the mini chocolate chips.
  6. Scoop out dough balls onto prepared baking sheets (about six per sheet).
  7. Bake for 13-15 minutes or until edges are golden; immediately top each cookie with a Reese's cup after removing from the oven.
  8. Allow cookies to cool on the pan for five minutes before transferring to a wire rack.
