  • 1 ½ cups unsalted butter (room temperature)
  • 4 cups all-purpose flour
  • 3 cups sugar
  • 6 large eggs (room temperature)
  • 1 tablespoon pure vanilla extract
  • 1½ cups milk
  • 23 tablespoons strawberry puree
  • 23 tablespoons blueberry puree
  • Gel food coloring (red and blue)
  • 3 ½ sticks unsalted butter (softened for frosting)
  • 3 cups sifted confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F. Prepare four 8-inch cake pans by greasing them and lining with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In an electric mixer, cream together butter and sugar until fluffy. Add eggs one at a time along with vanilla extract.
  4. Gradually mix in the dry ingredients alternately with milk until just combined.
  5. Divide batter into four portions: color two with strawberry puree and red gel, one with blueberry puree and blue gel, leaving one plain.
  6. Pour colored batters into prepared pans; bake for 30–35 minutes or until a toothpick comes out clean.
  7. Let cakes cool completely before leveling and stacking with frosting in between layers.
  8. Frost the top and sides as desired; customize decorations if you wish.
