  • 1 1/2 cups dry red lentils
  • 1 large carrot (finely diced)
  • 1 onion (chopped)
  • 4 cloves garlic (minced)
  • 1 heaped tbsp fresh ginger (minced)
  • 3 cups vegetable broth
  • 1 cup canned coconut milk
  • 1 1/2 tsp ground cumin
  • 1 tbsp curry powder
  • 1/2 tbsp sweetener of choice
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • Sea salt and black pepper (to taste)
  • 1/3 tsp red pepper flakes (optional)

Instructions

  1. Rinse the lentils under running water until clear.
  2. In a pot over medium heat, sauté chopped onion in oil until translucent (about 3-4 minutes).
  3. Add garlic, ginger, carrot, and bell pepper; cook until softened.
  4. Stir in spices and rinsed lentils along with the vegetable broth; bring to a boil.
  5. Reduce heat to low and simmer for about 10 minutes until lentils are tender.
  6. Mix in the coconut milk and cook for an additional 5 minutes to thicken.
  7. Season to taste with salt and pepper before serving warm.
