  • 2 cups chopped cucumbers (unpeeled)
  • 2 cups chopped bell peppers (any color)
  • 2 cups chopped zucchini
  • 1 cup chopped onion
  • 4 cups chopped seeded peeled tomatoes
  • 3 cups white vinegar
  • 2 cups granulated sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves

Instructions

  1. The night before or at least 8 hours prior to canning, soak diced cucumbers, zucchini, onion, and peppers in a large bowl of water with pickling salt.
  2. Drain and rinse the soaked vegetables thoroughly the next day and squeeze out excess water.
  3. Chop tomatoes and remove seeds.
  4. In a large saucepan, combine tomatoes, vinegar, mustard seeds, turmeric, cinnamon, allspice, and ground cloves. Bring to a boil over medium heat while stirring.
  5. Reduce heat and simmer for about 30 minutes.
  6. Add drained vegetables and sugar to the saucepan; bring back to a boil then simmer for another 20 minutes.
  7. Fill sterilized jars with relish leaving some space at the top; seal jars tightly and process in a water bath for 15 minutes.
