  • 1.5 teaspoons baking powder
  • 3 tablespoons raspberry syrup
  • 3 drops red food coloring (optional)
  • 1/2 cup frozen raspberries (chopped into tiny pieces)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix together gluten-free flour, cornstarch, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Gradually add the wet ingredients (cornstarch mixture, milk, raspberry syrup) until combined.
  4. Slowly incorporate the dry ingredients into the wet mixture and gently fold in the frozen raspberries.
  5. Drop spoonfuls of dough onto the baking sheet and bake for about 15 minutes or until edges are lightly golden.
