  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the canned white beans under cold water until thoroughly drained. Halve the cherry tomatoes and dice the cucumber.
  2. Thinly slice the red onion and tear fresh basil leaves into smaller pieces.
  3. In a large mixing bowl, combine the white beans, cherry tomatoes, cucumber, red onion, and basil. Gently toss to mix.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until emulsified.
  5. Pour the dressing over the salad mixture and toss gently until all ingredients are well-coated.
