  • 10 whole dried Sichuan red chilies
  • 2 tablespoons vegetable oil
  • 3 tablespoons water
  • 1 tablespoon cornstarch
  • 1 teaspoon regular soy sauce
  • ½ teaspoon baking soda
  • 1 tablespoon vegetable oil
  • 2 tablespoons white granulated sugar
  • 2 tablespoons water
  • 1 tablespoon regular soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • ½ tablespoon dark soy sauce
  • 1 teaspoon cornstarch
  • ½ teaspoon ground sichuan peppercorn
  • 3 garlic cloves
  • 1 teaspoon ginger

Instructions

  1. Dice chicken into 1.5-inch cubes and marinate with marinade ingredients for 15-30 minutes.
  2. Combine sauce ingredients in a small bowl until sugar dissolves; set aside.
  3. Heat oil in a large pan over medium-high heat; cook marinated chicken until golden brown (5-6 mins). Remove chicken.
  4. Stir-fry dried chilies, green onions, and peanuts for 15 seconds; add bell peppers and cook another 30 seconds.
  5. Return chicken to the pan and mix with the prepared sauce; stir-fry until well coated (about 30 seconds) and serve immediately.
