  • 1 medium eggplant
  • 2 medium zucchinis
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 ripe tomatoes (or one can of diced tomatoes)
  • 1 large yellow onion
  • 3 cloves garlic
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon Herbes de Provence
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Wash and chop all the vegetables: dice the eggplant, slice the zucchini, chop the bell peppers, finely dice the onion, and mince the garlic.
  3. In a large skillet over medium heat, add olive oil and sauté onions and garlic until translucent. Add the eggplant and cook until tender.
  4. Stir in zucchini and bell peppers; cook for five minutes until softened. Mix in tomatoes and Herbes de Provence.
  5. Transfer the vegetable mixture to the prepared baking dish and spread evenly.
  6. Cover with foil and bake for 25 minutes. Remove foil for the last ten minutes to allow slight browning.
