  • 24 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup grated parmesan cheese
  • 1 egg
  • 1/4 teaspoon nutmeg
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 tablespoon minced fresh sage
  • 15 oz can pumpkin puree
  • Jar of vodka sauce (e.g., Rao's)
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the jumbo pasta shells in boiling water until al dente; drain and cool on a baking sheet.
  3. In a mixing bowl, combine ricotta, pumpkin puree, parmesan, egg, nutmeg, salt, pepper, and sage until smooth.
  4. In another bowl, mix together vodka sauce, remaining pumpkin puree, and heavy cream.
  5. Spread about three-fourths of the sauce mixture in a 9×13 baking dish.
  6. Fill each shell with approximately 2 tablespoons of the ricotta-pumpkin filling and arrange them in the dish.
  7. Cover filled shells with remaining sauce and foil; bake for 30 minutes.
  8. Remove foil, sprinkle with mozzarella cheese, and bake uncovered for an additional 15 minutes until bubbly.
