  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda

  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined to form a crumble mixture.
  3. Press half of the crumble mixture into the baking dish to create the base layer.
