Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with cold water, bring to a boil, then remove from heat and let sit covered for 10 minutes.
  2. Prepare an ice bath: Fill a large bowl with ice and water. Transfer the hot eggs into the ice bath to cool.
  3. Peel the eggs: Once cooled, gently crack and roll the eggs between your hands before peeling under running water.
  4. Halve and scoop: Slice each egg in half lengthwise and scoop yolks into a bowl.
  5. Mix filling: Combine yolks with mayonnaise, mustard, salt, pepper, paprika, and optional food coloring until smooth.
  6. Pipe mixture: Use a piping bag fitted with a star tip to fill egg whites with the yolk mixture.
  7. Create pumpkin shapes: Make ridges with a knife or toothpick for texture and insert chive pieces as stems.
  8. Chill before serving: Refrigerate for at least 30 minutes before enjoying.
