  • 2 cups whole milk
  • 4 eggs (yolks separated from whites)
  • Pinch of cream of tartar
  • 1 1/2 cups confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare an 8×8 or 9×9 inch baking dish lined with parchment paper.
  2. Warm the milk gently until lukewarm.
  3. Beat the egg whites with a pinch of cream of tartar until stiff peaks form.
  4. Melt the butter and let it cool slightly.
  5. In a bowl, mix egg yolks and confectioner’s sugar until pale; add in vanilla, spices, melted butter, and flour.
  6. Stir in pumpkin puree and 1/4 cup warm milk until smooth, then gradually add remaining milk while mixing.
  7. Fold in beaten egg whites carefully and pour into the prepared dish.
  8. Bake for about 60-65 minutes or until set and lightly golden.
  9. Allow to cool completely before cutting into squares.
