  • 1 cup almond flour
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 16 oz cream cheese (room temperature)
  • Pumpkin spice
  • 1/2 cup white sugar (for the crust)
  • 1/4 cup salted butter (melted, for the crust)
  • 1/3 cup white sugar (for the streusel)
  • 1/3 cup brown sugar (for the streusel)
  • 1/4 cup oats (for the streusel)
  • 1/2 cup flour (for the streusel)
  • 6 T. salted butter (softened, for the streusel)
  • 1 tsp vanilla (for the streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. For the crust, combine walnuts, almond flour, white sugar, and melted butter; press evenly into the bottom of the prepared dish.
  3. In a mixing bowl, beat the cream cheese and white sugar until smooth. Add eggs one at a time; reserve 1.5 cups of this mixture.
  4. Pour the remaining cheesecake batter over the crust.
  5. Stir pumpkin puree and pumpkin spice into the reserved batter; layer it over the cheesecake mixture without mixing.
  6. Prepare streusel by combining sugars, oats, flour, and softened butter until crumbly; sprinkle over the pumpkin layer.
  7. Bake for 60-70 minutes until set in the center. Cool before chilling for at least 2 hours before cutting into bars.
