  • 2 cups all-purpose flour
  • 1 box (3.4 oz) pistachio instant pudding mix
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • Coarse sugar (optional for topping)

Instructions

  1. Preheat your oven to 425°F and line muffin tins with liners.
  2. In a medium bowl, whisk together vegetable oil, sugar, eggs, almond extract, and milk until fluffy.
  3. In another bowl, combine flour, pudding mix, baking powder, and salt; whisk well.
  4. Fold the dry mixture into the wet mixture until just combined; lumps are fine.
  5. Spoon batter into prepared muffin tins filling each about 3/4 full. Sprinkle coarse sugar on top if desired.
  6. Bake for 6 minutes at 425°F then reduce temperature to 350°F and bake for an additional 11-12 minutes or until a toothpick comes out clean.
  7. Let cool for about 5 minutes in the tin before transferring to a cooling rack.
