  • 3 pounds fresh peaches (about 89 medium)
  • 2/3 cup granulated sugar
  • 1/2 cup all-purpose flour or 1/4 cup instant tapioca
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • Homemade or all-butter pie crust (makes two crusts)

Instructions

  1. Preheat oven to 425°F (218°C) and prepare your pie dish.
  2. Peel and chop peaches into 1-inch chunks; mix with sugar, flour or tapioca, lemon juice, and cinnamon.
  3. Roll out the bottom crust and place it in the pie dish; fill with peach mixture and dot with butter.
  4. Roll out top crust, either as a whole or lattice style, and place on top of filling.
  5. Brush with egg wash and sprinkle with coarse sugar if desired.
  6. Bake for 20 minutes at 425°F, then reduce to 375°F (190°C) and bake for an additional 45-50 minutes until bubbly.
  7. Allow cooling for at least four hours before slicing.
