  • 1¾ cups vanilla wafer crumbs
  • ¼ cup light brown sugar
  • ⅓ cup unsalted butter
  • 3 (8 oz) packages cream cheese
  • 1 cup granulated sugar
  • 1 (15 oz) can pumpkin puree
  • 1½ cups chopped pecans
  • 2 large eggs
  • Spices: cinnamon and nutmeg

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix crumbs with light brown sugar and melted butter; press into a springform pan.
  3. Bake crust for 6 minutes; set aside to cool.
  4. Cook dark brown sugar, corn syrup, butter, eggs, pecans, and vanilla in a saucepan until thickened; cool.
  5. Blend cream cheese, sugars, eggs, pumpkin puree, evaporated milk, cornstarch, cinnamon, and nutmeg until smooth.
  6. Pour cooled pecan mixture over the crust; top with cheesecake batter.
  7. Bake in a water bath for about 1 hour; add sour cream layer and bake additional 10-15 minutes.
  8. Cool gradually in the oven then refrigerate overnight before serving.
